1 small onion
1 c. red lentils
3 c. broth (or water with bouillon)
1 tbsp butter
1 tbsp curry powder
1/4 tsp Chinese five spice
Salt and pepper to taste
1/2 c. frozen peas
1. Sauté the onion in olive oil.
2. Add all other ingredients except peas (broth, lentils, butter, and spices). Bring to a boil.
3. Reduce heat to low and simmer for 30 minutes.
4. Add frozen peas, and simmer five more minutes.
5. Enjoy over tasty basmati rice!
